What you don’t have bread? What do you eat for breakfast?
I am asked regularly what I eat for breakfast if I don’t eat toast! Well, this is one of the recipes that I regularly turn to because it is quick easy and tastes great. It is also very easy to adapt to different flavours if you are looking for something different.
There are 7 easy ingredients in this recipe that I ALWAYS have in the cupboard.
2 TBS Olive oil
1 medium onion chopped
1 large sweet potato diced
2 white potatoes diced
3 carrots cut into 1/2 cm rounds
salt to taste
garlic powder (or fresh garlic) to taste
- Heat olive oil in a pan
- Add onion and soften for a couple of minutes
- Add chopped veggies and cook for a few minutes with the lid on the pan.
- Stir in salt and garlic
- Cover the pan and let it cook on a medium heat. Make sure you keep an eye on it as it will cook and stick to the pan. if it is doing this add a small amount of liquid (water or homemade stock)
- When the veggies are almost cooked take the lid off and cook on a higher heat to brown the veggies a little. Ensure you continue stirring at this stage.
Serve on a bed of baby spinach, as a side at dinner or great to eat at brekky with soft boiled egg broken over the top.
Add your choice of herbs to whatever your family loves
Add Kale or any form of leafy green at about the halfway cooking mark and you might need to add a little more salt.
